Yeah, so I have mentioned a couple of times about working on a chili recipe. I think I found one I like. It is basically a rip from a Betty Crocker book with a few adjustments.

  • 2 tablespoons olive oil
  • 1 small onion diced
  • 2 lbs ground beef (would have used stew meat, but sadly, they were out)
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 2 cans (14.5 oz each) diced tomatoes with green chilies, undrained
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons finely chopped garlic
  • 1/2 cup water
  • 1 green pepper, coarsely chopped

Heat olive oil under medium heat in large pot. Add in garlic and onions, stirring regularly, until onions soften up a bit (5-6 min). Add in the meat and spices. Cook until meat is lightly browned (8-10 min). Stir in your black beans, tomatoes, chopped green pepper, and water. Reduce heat to low-medium low, stirring occasionally. Cook for about an hour. Eat and suffer through it.

I served with some corn bread (cause wooman likes corn bread and I realized I had never made it before) and massive amounts of shredded cheese (cause I have to keep my girlish figure *cough).

This also works really well as a slow cooker recipe. Only after you brown the meat you toss it and the rest in the slow cooker under low heat for 8-10 hours.

I'd probably at some more heat to it with a jalapeno or two. Then again, The Wife and I like our foods spicy hot. When we go to the local chinese restaurant we ask them to make it Asian HOT, not American hot. They usually do and still give us some additional hot red pepper sauce.

I still think that the recipe could do without onions, but the husband insists. The cornbread was good though. :)
